Layered Artichoke Cheese Spread

Ingredients

1 jar (6-1/2 ounces) marinated quartered artichoke hearts, drained and chopped

1/3 cup roasted sweet red peppers, drained and chopped

2 packages (8 ounces each) reduced-fat cream cheese

1 envelope ranch salad dressing mix

3 tablespoons minced fresh parsley

Assorted crackers

Direction

Pat artichokes and peppers dry then set aside. Use plastic wrap to line a 3-cup bowl. Beat dressing mix and cream cheese in a big bowl until smooth. Mix parsley, peppers and artichokes in another bowl.

Spread into prepared bowl with a third of the cream cheese mixture, then place a half of artichoke mixture on top. Repeat layers and put remaining cream cheese mixture on top. Cover and chill for a minimum of 4 hours. Unmold on a serving plate then serve together with crackers.
